House-Smoked Mozzarella Cheese


Our House-smoked Mozzarella Cheese was smoked on hickory for four hours and then let to rest for three days before packaging. By allowing the cheese to rest before packaging, the smoke has a chance to mellow in the cheese. It was smoked at approximately 140ºF throughout the process, which made the cheese sweat out some of its moisture. This fundamentally changes the cheese texture, making it simultaneously firmer and creamier.

It is truly a melt-in-your-mouth experience that conjures thoughts of a beach fire on a warm summer evening.

  • XS 112g (half wheel)
  • Small 120-149g (half wheel)
  • Medium 150-180g (half wheel)
  • Large 300-350g (full wheel)
